Winemaker Notes: "The chenin grape is my greatest passion. It is the only variety of the domain. I vinify it dry to obtain the closest expression of the “terroir”. The creation of dry whites occurs mainly through the work in the vines. Every step taken, every choice made, is decisive. The wine stores everything in its memory and renders its’ own unique synthesis. An excellent indicator of terroir, the chenin grape already has great character, but grown on shale, or schist, it becomes intensely so, indomitable. Its intensity expresses itself in the perfect balance of acidity and minerality with a touch of pleasing bitterness. A bitterness that is perhaps a little “baroque” but which is simply splendid at the table."
